Serum albumin, the most abundant protein (30-50 mg/mL) in the plasma, is a multifunctional, non-glycosylated, negatively charged protein produced in the liver. It binds to a wide variety of lipophilic compounds such as metal ions, pharmaceuticals and metabolites. Albumin regulates osmotic pressure in the blood and has a role in the transport of fatty acids.
