Antimicrobial activity
This enzyme purified from chicken egg white is provided as an albumin-free freeze dried powder in the chloride form. The enzyme catalyzes the hydrolysis of 1,4-beta-linkages between Nacetylmuramic acid and N-acetyl-D-glucosamine residues in peptidoglycan and between N-acetyl-D-glucosamine residues in chitodextrin. Its major application is to disrupt the cell walls of certain bacteria but may also be used as an antimicrobial agent.
